Strawberry Bread Pudding

To me, strawberries are the fruit of summer and as 4th of July (the summer holiday) is tomorrow, here’s an easy strawberry dessert you can use to impress your friends and family. The recipe used can be found here.


  • 1 and 1/4 cups (packed) dark brown sugar
  • 4 and 1/2 cups 1/2-inch cubes crustless egg bread (such as challah or brioche)
  • 7 large eggs
  • 2 cups half and half
  • 1 cup whole milk
  • 2 tablespoons sugar
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon cinnamon
  • 2 pinches of salt
  • 2 and 1/2 cups sliced and hulled organic fresh strawberries
  • Disposable Aluminum Foil 9” Square Cake Pans or 8”x8”x2” glass baking dish
  • Sieve

Prep Time: 45 minutes
Bake Time: 1 hour 20 minutes

My co-worker shared this tip about using a straw to hull a strawberry.

The original recipe uses one baking pan (8x8x2 baking dish), but I use two smaller ones (2 of the 9×9 square disposable cake pans) so I can keep one for myself, and gift someone else with one or freeze it and save it for later.


  1. Spread the brown sugar evenly on the bottom of the pans. Pack the sugar in nice and tight
  2. Sprinkle the bread over the sugar. I used challah bread from Trader Joe’s
  3. Combine eggs, cream, milk, sugar, vanilla, cinnamon, and salt in a large bowl and blend.
  4. Pour custard into a cup for easier pouring over the bread. Pour the custard over the bread using a filter. I alternate a cup at a time between the two pans.
  5. Lightly press the bread down and add more bread if necessary
  6. Lay the strawberries on top of the bread and then lightly press them down. Sprinkle some more cinnamon if you want to.
  7. Preheat oven to 350° while letting the pudding stand for 30 mins. Occasionally lightly press down the bread and strawberries
  8. Place the pans in separate roasting pans. Fill roasting pan with warm water until the water is halfway up the side of the pans.
  9. Bake for about 1 hour 20 mins, or until top is brown and the custard is set.
  10. Let it cool and then enjoy!

You can enjoy with a scoop of ice cream or just by itself. I would like to try this recipe with some other kinds of fruit or sweets and other types of bread. So many bread pudding combination options!
